I cannot say that I have seen a lot of his films.
I do respect him for his contribution to movies. I also will say that he had a good salad dressing with his name and face on it.

Looking at Newman's body of work, I recall having seen three of his movies:
"Slap Shot": if you like hockey at all, this is well worth watching. It's really odd, but very funny. (The Hanson Brothers, the visual inspiration for the Dudley Boys stable, come from this movie.)
"The Sting": fucking awesome, especially if period pieces are your thing and specifically if you dig 1920's era gangster-ish stuff. Does a great job of building to a fantastic ending. One of those movies I'll watch just about any time I run across it on the TV.
"Cool Hand Luke": standard anti-authoritarian/rebel/fuck the man/anti-hero fare; it's not bad but I wouldn't go out of my way to watch it.
Newman's Own "Tuscan Italian" is probably my favorite salad dressing. Makes a great steak marinade, too.
Don't forget his scrumptuous spaghetti sauce as well.
